Guacamole

Guacamole is one of the best dips/salads in the world as well as one of the oldest. Guacamole was created by the Aztecs in Mexico. Guacamole means "avocado sauce"; Aztecs created this "sauce" using a stone and squashing the avocado into another bowl shaped stone. In certain areas of Mexico, this is still the way you will find Mexicans making it. 

The main ingredient is Avocado, sea salt  and lime juice; but as you know there are number of versions in each family.

This is our favourite recipe:
- 2 ripe avocado
- Coriander
- Sea salt
- Juice of one lime if small (otherwise, half)
- A touch of chives (will give you a touch of onion flavour but without having to add it)

Slice the avocados in half and remove the stone. Add the juice to avoid the avocado go brown. 
Put the ingredients in the Mortar and squeeze them with the pestle. Add the finely chopped coriander and chive and season it with salt. 

You can serve the Guacamole in the rustic Mortar with some blue corn chip tortillas around it!

Fridays are always a good day to prepare it as it is quick, simple and delicious!!
