banana bread
This is a scrumptious recipe which super easy to make. Great for using those ripe bananas that are not wanted. It is good to dip into milk and does not need to be buttered and freezes perfectly!
Ingredients
270g of brown sugar
270g plain flower
140gr of melted butter
2 ripe bananas
2 eggs
1 tea spoon of each: cinnamon, ginger
1 tea spoon of each: bicarbonate of soda and baking powder
a loaf tin
Method
Preheat oven to 170 ⁰C, Gas 3 , 325 ⁰F
Blend the eggs and the sugar with a mixer and beat well until it is well integrated. Add the bananas and beat again.
Mix the baking powder, bicarbonate of soda, spices and flour together. Add this to the egg mixture
and stir thoroughly well. Once it is well incorporated pour the melted butter and mix.
Spoon the mixture into the prepared loaf tin (greased and dusted with flour). Bake for about 1h our until a knife inserted in the middle comes out clean. Leave it to cool for few minutes before taking it out of the tin. Loosen it with a palette knife and take it out and leave it to cool in a rack. Cut it thick to serve.
