Today is "Paella day"!
Paella is maybe one of the most famous Spanish dishes. However, it has been hugely misinterpreted even from chefs like Jamie Oliver, whose infamous "Chorizo and Chicken Paella" upset the whole Spanish community. This was the straw that broke the camel's back for the Valencians, creators and guardians of this dish.
The city of Valencia has organised various events around the world to fight these fake versions. Today, there is a Paella Masterclass held in London's Guildhall Yard.
WikiPaella (www.wikipaella.org) , an association that informs about this dish, has selected the 19 ingredients that real Paella real must have. If the dish hasn't got them, call it "arroz" (rice) but never Paella.
Don´t be fooled, such a wonderful dish cannot be altered.
Rice, Saffron, Salt, Water, Paprika... Artichokes, Beans... Meat (Chicken, rabbit or pork)... Rosemary, Snails... Olive oil... And take it whith flat and wooden spoon. |
